The Grasparossa di Castevetro DOC ‘Vigneto Enrico Cialdini’ is obtained by the grapes of a single vineyard of 12,5 hectares of the Generale Cialdini Estate located in the south east area of the rolling hills of the village of Castelvetro whose soils are known to be the best for growing the ancient Grasparossa grape varietal. The grapes, manually picked and rigorously selected, are temperature controlled pressed and vinified in the modern cellar located in the property. Thus is this wine bottled following a slow “pris de mousse” in “cuves closes” and maturing period. Displaying a ruby red with violet lights colour, intense froth, full structure, round with lovely blackberry and raspberry fruit on the palate, the ‘Vigneto Enrico Cialdini’ belongs to the elite of Cleto Chiarli range of wines. Serve at cellar temperature (14°-16°C). LAMBRUSCO GRASPAROSSA DI CASTELVETRO DOC Red wine, semi-sweet, sparkling from natural fermentation.The Modena province is known for the production of the traditional Lambrusco. Since 1970 its prestigious grape varietals have the Appellation d'Origine Controlée (DOC). This wine is obtained from the generous grapes of the ancient 'Grasparossa' vine, cultivated on the hills surrounding the Castelvetro village in the Modena province . It is a wine of an intense ruby colour, with a light pink froth. The fruity nose and taste, which are typical of this varietal, are very pleasant indeed. Thanks to the slow fermentation this wine retains a remarkable softness. It is a wine particularly suitable with pastas, meats and for dessert. Dry, red, semi sparkling wine The ‘Premium’ is obtained by a rigorous selection of the best grapes of the Sorbara varietal from the vineyards of Chiarli Estates. The manual picking of the best grapes only, a careful vinification followed by a long temperature controlled fermentation make this bright red wine lovely fruit on the palate with a pleasant bouquet. The pressing, vinification and bottling are efficiently performed in the cellar located in one of Chiarli Estates, Azienda Agricola Castelvetro, where they produce their top range wines made with grapes of their properties emphasising the locality or “terroir” on which the grapes are grown. This Spumante wine is obtained by a selection of Pignoletto grapes, an indigenous varietal of Colli Bolognesi, growing in the vineyards belonging to Chiarli. The result of a careful vinification and fermentation in ‘cuve close’ at low temperature for more than six months is this lively Spumante Brut of class and distinguished characteristics. Showing a soft straw colour as well as a slightly aromatic and velvety taste this wine is ideal as an aperitif, with hors-d’oeuvres and fish courses. Serve chill (8° - 10°C).
