Obtained with olives from the leccino, frantoio and gentile varieties harvested from organic olivegroves directly supervised by our company. The olives are still harvested today with the traditional manual method, washed and cold milled, within twenty-four hours thus preventing their overheating. The milling system adopted is the continuous sinolea method by dripping, and immediately following milling, the oil obtained undergoes soft filtering by fall with the aid of sterile cotton filtering layers and finally it is bottled. The choice of using the soft filtration system by fall derives from our belief that mechanical filtering, by overheating the product, may influence the organoleptic characteristics of the oil.
